2 eggs
2 cups buttermilk
4 tablespoons butter
extra butter for greasing the pan

Combine all ingredients for the Instant Pancake Mix into a container with a tight fitting lid and shake to combine well.

Use the Instant Pancake Mix within 3 months.

If using an electric griddle, heat to 350ºF.

Place pancake mix in a very large bowl.

In another large bowl, whisk together egg whites and buttermilk.

In a medium sized bowl, whisk together egg yolks and melted butter.

Pour the egg yolk mixture into the buttermilk mixture and whisk until well combined.

Pour this mixture onto the pancake mix and whisk just enough to bring it together, about 10 - 15 seconds. There will still be lumps.

If using a skillet, turn the heat on medium-low.

The pan will be ready when a drop of water sizzles and dances across the surface.

Lightly butter the pan and then wipe off thoroughly with a paper towel so that no butter is visible.

Ladle pancake batter onto the pan and sprinkle on any desired toppings.

When bubbles begin to appear and the edges are puffed up and beginning to set, lift the pancake to check the doneness.

When pancake is at desired golden color, flip over for another 1 - 3 minutes until completely cooked.

If needed, pancakes can be kept warm by placing them on a wire rack on a baking sheet, and loosely tent with aluminum foil, in a 200ºF oven for up to 20 minutes.
