Measure 2.5 cups of flour and add to a bowl.
Add 1 tablespoon of baking powder, 1 teaspoon of baking soda, 1 tablespoon of sugar, and 1 teaspoon of salt to the flour and whisk to combine.
In another bowl, whisk together 2 cups of buttermilk, 4 tablespoons of melted butter, and 2 egg yolks.
Gently mix the buttermilk mixture into the dry ingredients until just combined using a rubber spatula.
Add the 2 egg whites (not whipped) to the batter and fold until just combined, leaving some lumps.
Let the batter rest for 15 to 30 minutes.
Heat a 12-inch cast iron skillet over medium heat and add 1 tablespoon of butter.
Pour a hefty third cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown.
