Heat a nonstick skillet over low heat.

Add about 1.5 tablespoons of butter to the pan, allowing it to melt gently without bubbling or browning.

Use a spatula or fork to constantly move the eggs in the pan, keeping them in motion to create fine curds.

Once the eggs are almost done, remove the pan from heat and add a spoonful of plain yogurt to cool them down and stop the cooking process.

Pour the creamy scrambled eggs over the toasted and buttered Japanese cream bread.
