Peel the potatoes and grate them using a coarse box-style grater.

Grate the potatoes directly onto the center of a tea towel.

Roll up the tea towel with the grated potatoes and wring out as much moisture as possible over a bowl or sink.

Set the wrung out potatoes aside and repeat the wringing process every 15 minutes for about an hour until little moisture is released.

Fluff the grated potatoes to separate them before cooking.

Heat half the butter with a teaspoon of oil in a heavy-based pan over medium-high heat.

Pat the grated potatoes down into a potato cake shape in the pan.

Turn the heat down to medium and tidy up the edges of the potato cake with a spatula.

Cover the pan and cook for about 5 minutes until the edges start to color.

Add half of the remaining butter around the edges of the potato cake and cover again, cooking for another 5 minutes.

Check if the potato cake can slide around in the pan; if not, loosen it with a spatula.

Cover and cook for an additional 3 to 5 minutes until the edges are dark golden and crisp.

Sprinkle salt and freshly grated nutmeg over the top of the potato cake, along with a grind of white pepper.

Place a plate on top of the pan and carefully flip the potato cake onto the plate.

Melt the remaining butter in the pan and slide the flipped potato cake back into the pan.

Sprinkle more nutmeg, salt, and pepper on top of the potato cake.

Cook uncovered for about 10 minutes until the underside is crisp and golden.

Slide the rösti out onto a plate and serve.
