Add grated potatoes to the skillet and season with salt and pepper.
Press the potatoes down with a spatula to form a compact cake.
Cook until the bottom is golden brown, about 10-15 minutes.
Carefully flip the rösti using a plate and cook the other side until golden, another 10-15 minutes.
Optional: Add sautéed onions, cheese, or bacon on top before flipping.
Remove from skillet and let it rest for a few minutes before slicing.
Garnish with fresh herbs before serving.
