Grate the 1kg of festkochende potatoes and rinse them under cold water until the water runs clear.
Drain the grated potatoes and squeeze out excess moisture using a clean kitchen towel.
Heat 50g of fried butter or fried cream in a skillet over medium heat until melted and foamy.
Add the grated potatoes to the skillet, spreading them evenly.
Season with salt, and press down gently with a spatula.
Cook until the bottom is golden brown, about 5-7 minutes.
Carefully flip the rösti using a plate to assist, cooking the other side until golden, another 5-7 minutes.
If desired, add 100g of cheese on top during the last few minutes of cooking along with the 100gr of lean bacon and 10пк of green onions.
