Wash the potatoes.
Put the potatoes in a pan with enough water to cover them and turn on the heat to slightly boil them.
Cook the potatoes for about 4-5 minutes from the moment the water starts boiling.
Drain the potatoes.
Peel the potatoes.
Grate the potatoes using a cheese grater with large holes.
Put the grated potatoes in a bowl and add salt, black pepper, and any other spices if desired, then mix everything up.
Sprinkle a handful of potato starch or flour and start pressing the grated pieces together to form the rösti.
Pour enough olive oil to cover the whole non-stick pan and heat it up.
Once the oil is hot, start frying the potato disc for about 5-10 minutes on each side.
Once cooked, place the potato rösti on a plate with a paper towel to soak up the extra oil.
Serve them on another dish and add extra salt on top if desired.
