Boil the potatoes in salted water for a few minutes until just cooked but not mushy.
Transfer the boiled potatoes to an ice bath to stop the cooking process.
Peel the potatoes using the dull side of a knife.
Shred the peeled potatoes.
Add ground nutmeg, coarse sea salt, and white pepper to the shredded potatoes and mix well.
Transfer the mixture into a 9-inch cast-iron frying pan.
Add 2 tablespoons of safflower oil to the pan and flatten the potato mixture evenly.
Press down the edges of the potato mixture to make it easier to flip later.
Cook on medium heat for about 10-12 minutes until it smells and sounds like fried potatoes.
Flip the rösti onto a cutting board or flat surface.
Cook the other side for about 5 minutes until golden brown.
