Peel and grate the potatoes coarsely.
Rinse the grated potatoes in cold water to remove excess starch.
Drain the potatoes well and pat dry with a kitchen towel.
Heat butter in a large skillet over medium heat until melted.
Add grated potatoes to the skillet and spread evenly.
Season with salt and pepper to taste.
Cook for about 10-15 minutes until the bottom is golden brown.
Carefully flip the rösti using a plate or spatula.
Cook the other side for another 10-15 minutes until golden brown and crispy.
Once cooked, transfer to a serving plate and garnish with fresh herbs.
Cut into wedges and serve hot.
