Wash and peel the potatoes.

Boil the potatoes in salted water for approximately 20-30 minutes. When the potatoes are soft and can be easily pierced with a fork without breaking, remove from heat and let cool. We need them to have some consistency so they can be scratched easily. They cannot be very soft.

With a grater, grate all the potatoes. When finished, squeeze half a lemon over the grated potatoes.

In a large hot skillet, add two tablespoons of butter.

Once the butter has melted, add the grated potatoes. Let cook for a few minutes until they start to brown. Move occasionally. Start with high temperature and then go down as it cooks. This will prevent it from burning and cooking well.

After 10 minutes, begin to form a round shape with the help of the spatula.

After a few minutes, move the pan around a bit to see if it comes off easily from the base. If not, let it cook for a few more minutes.

Flip the Swiss rösti by tossing it into the air or with the help of a plate. It is very important that it does not split. We need you to keep this round shape.

Once flipped, let the other side cook for about 10 minutes at medium heat.

Flip the rösti one more time to make sure both sides have browned properly.

Serve on a plate, add salt to taste and enjoy. You can also add fresh rosemary if you wish.
