Carefully flip the rösti using a plate or spatula.
Cook the other side until golden brown, another 10-15 minutes.
Add diced onion and cheese on top, cover, and cook until melted, about 5 minutes.
Season with salt and black pepper to taste.
Serve hot, garnished with fresh herbs.
