Rub the pork shoulder with minced garlic, cumin, oregano, salt, and pepper.
Marinate the pork in orange juice and beer for at least 4 hours, preferably overnight.
Place the marinated pork in a roasting pan with bay leaves and chopped onion.
Cover the pan with aluminum foil and roast for 2-3 hours until tender.
Remove the foil and increase the oven temperature to 425°F (220°C).
Roast for an additional 30-45 minutes until the skin is crispy and golden brown.
Let the pork rest for 15-20 minutes before carving.
Serve with boiled potatoes, avocado, corn, and lime wedges.
Garnish with chopped cilantro and diced tomatoes.
