Beef with Muriwo

1kg beef brisket
Oil
1 small tomato chopped
1 small onion chopped
Muriwo (Spring greens) - chopped
Beef stock cube
Half a teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon of a flavourful season of choice
1 teaspoon curry powder
1 cup of boiled water

Boil beef on medium heat until tender, ensuring the pot is covered (about an hour and a half).

Once beef is done, remove the water from the pot and add some oil.

Add salt, black pepper, garlic powder, paprika, and a seasoning of choice (e.g., half a teaspoon of all purpose seasoning and 1 knorr cube).

Add onion into the pot and stir until browned (on medium heat).

Add the chopped tomato and stir for about 5-6 minutes.

Add the curry powder and stir in for another 2-3 minutes.

Add the stock cube.

Add 1 cup of water and stir in for about 7-8 minutes.

Add chopped muriwo/spring greens and stir until combined with the meat and soup.

Cover the pot and place on low medium heat to simmer until done.
