Bahamian Christmas Cake

Originating from the Bahamas, Bahamian Christmas Cake is a cherished holiday dessert often enjoyed during festive gatherings. Traditionally made with a variety of dried fruits and soaked in rum, it symbolizes abundance and celebration. This cake is a staple at Christmas feasts, reflecting the islands' rich culinary heritage. Today, variations exist, with some opting for non-alcoholic versions, making it accessible to all.

Simmer the dried fruits (dates, prunes, dried pineapples, black raisins, white raisins, green cherries, red cherries) for 2 to 3 minutes on medium heat.
Prepare the batter by mixing together the unsalted butter and granulated sugar (or white and dark brown sugar) until well combined.
Add molasses and eggs to the butter mixture, mixing well after each addition.
In a separate bowl, combine the ground allspice, cinnamon, almond flavor, vanilla flavor, and salt with the milk and pineapple juice.
Gradually add the dry ingredients (all-purpose flour and baking powder) to the wet mixture, mixing until there is no trace of flour.
Decorate the batter with additional fruits and nuts if desired before baking.
Preheat the oven and bake the cake on the middle rack for about 40 to 45 minutes or until a toothpick comes out clean.
Poke holes into the cake and feed it with the melted butter mixture (made with butter, pineapple juice, and brandy).
Allow the cake to cool for 10 minutes before removing it from the baking pan.
Wrap the cake tightly in plastic wrap and feed it with the butter mixture every 3 days.
