Gujarati Khakra
Cultural Context
Originating from the western Indian state of Gujarat, Khakra is a traditional snack made from whole wheat flour and spices. It is often enjoyed with pickles or yogurt and is a staple in many Gujarati households. Khakra is celebrated for its crispy texture and versatility, making it a popular choice for breakfast or tea-time snacks. In modern times, it has gained popularity beyond Gujarat, often found in Indian restaurants and homes across the globe, with various flavors and ingredients.

Mix wheat flour, behan flour, cumin seeds, turmeric powder, chili powder, carom seeds, kasuri methi, asafoetida, and salt in a bowl.
Add water gradually and knead to form a smooth dough.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Divide the dough into equal portions and roll each portion into a ball.
Flatten each ball and roll it out into a thin circle on a floured surface.
Sprinkle sesame seeds on top and press gently to adhere.
Heat a tava or skillet over medium heat until hot.
Place the rolled khakra on the tava and cook for 1-2 minutes until lightly browned.
Flip and cook the other side, pressing with a spatula to ensure even cooking.
Cook until both sides are crisp and golden brown, about 3-4 minutes total.
Remove from heat and brush lightly with oil if desired.
Cool completely before storing in an airtight container.
