Add 2 teaspoons of cinnamon to the flaxseed.
Pour in 1/2 cup of melted and cooled real butter.
Add 1/2 cup of granular stevia and 1 generous spoonful of vanilla Nutralean.
Mix the ingredients until crumbly.
Spoon the mixture into dessert dishes, patting it down lightly to form a crumbly base.
Set the bases aside and prepare the lemon custard.
In a bowl, combine 1/2 cup of real lemon juice, 1/2 package of room temperature cream cheese, and 1 cup of low-fat whipping cream.
Add 4 scoops of vanilla Nutralean and a few drops of gel food coloring for a lemony look.
Sweeten the mixture with liquid stevia to taste, equivalent to 1/2 cup sugar.
Start the mixer on low, then increase to fold until the mixture thickens.
Scoop the lemon pudding into each dessert jar.
To make the meringue, pour 1/2 cup of egg whites into a mixing bowl.
Add 1/2 cup of erythritol and 1/4 teaspoon of cream of tartar.
Start the mixer on low, then increase to full speed until peaks form in the meringue.
Scoop the meringue on top of the lemon pudding in the jars.
Use a kitchen torch to brown the meringue until golden brown, similar to how you would in an oven.
