Thinly slice the onion and set it aside

Remove the skin from the chorizo, slice it, and chop it into sticks

Slice the padrón peppers and set them aside

Roughly mince the garlic and chili, adjusting spice level to taste

Heat a large open flat pan over medium heat and add 1 tablespoon of olive oil

Once slightly hot, add the sliced onions and sauté for about 3 to 4 minutes until they soften and start changing color

Add the sliced chorizo and padrón peppers, stir well, and let them fry for about 4 to 5 minutes

Add the minced garlic, chilies, and chopped parsley stems, along with half a teaspoon of sweet paprika and 1 teaspoon of roasted cumin powder, stirring for about 1 to 2 minutes

Add 1 tablespoon of tomato paste or substitute with 150 ml of white wine, stirring well to coat all ingredients

Make space in the pan and add the finely chopped tomatoes, mixing everything together

Cover with a lid and let it cook until the tomatoes soften
