2 cups carrots, sliced

Place 300 g of tomato, 6 sprigs of thyme, 3 spicy chili habanero, 1 garlic, 1/2 red onion, and 2 big red peppers into a blender and blend into a fine paste.

In a pot over medium flame, add the blended sauce and stir continuously to prevent sticking until thick, then set aside.

In a different pot, heat 1/2 cup of oil and add chopped red onions, cooking for 3 to 4 minutes.

Add 6 tablespoons of tomato paste to the onions and cook for 15 minutes until well cooked.

Add the previously made sauce, 2 pieces of bay leaf, and 2 tablespoons of curry powder, mixing well and cooking for another 15 minutes, then set aside.

In another pot, add 1 and 1/2 kg of beef, 4 teaspoons of salt, 10 sprigs of thyme, and 4 tablespoons of curry powder, stir-frying for about 10 minutes to infuse the spices.

Add 3 cups of water and a few curry leaves, cover, and let simmer until the beef is soft and tender and the water evaporates.

Once the water has evaporated, add 1/2 cup of oil to brown the beef until darker in color.

Add the sauce made earlier, onion rings, 2 diced red peppers, chopped spring onions, and salt, mixing and cooking for just 1 minute to maintain the crispness of the onions and peppers.
