Sift 300 grams of all-purpose flour into a bowl.

Add salt as per taste and crush some carom seeds (optional) and add them.

Add 3-4 tablespoons of oil (or ghee) to the flour and mix well.

Gradually add water to knead into a soft dough, not too hard or too soft.

Cover the dough with oil and let it rest.

Chop 3 large onions finely and squeeze out excess water.

Boil 1 cup of green peas and crush them coarsely.

Crush garlic and half an inch piece of ginger.

Add 5-6 crushed green chilies to the mixture.

In a pan, heat 1 tablespoon of oil and add the chopped onions, sautéing until soft.

Add crushed ginger, garlic, and green chilies, and sauté briefly.

Add the boiled and crushed peas, mixing well.

Add red chili powder, turmeric powder, garam masala, coriander powder, and salt to taste, and sauté for a minute.

Remove from heat and let the filling cool down; mix in chopped mint and coriander leaves.

Divide the dough into medium-sized balls and flatten each ball.

Place filling in the center, wet the edges, and fold to seal.

Roll gently to flatten the filled dough ball.

Heat oil in a pan over medium heat and fry the kachoris until golden brown, about 8-10 minutes, adjusting heat as necessary.
