Pyaz ki Kachori

Traditionally enjoyed during tea time or as a street food, these kachoris are often paired with tangy chutneys. Whole wheat flour adds fiber and nutrients.

Ghee adds richness and flavor.
Take flour in a bowl.
Add churned butter and oil to the flour.
Mix the butter and oil with the flour.
Add a generous pinch of salt and mix well.
Add some water to make a soft dough, which should be a bit sticky.
Knead the dough until soft and elastic, then let it rest for 10 minutes.
Heat a pan and add some oil for the stuffing.
Add asafoetida, chopped ginger, and green chilies to the pan.
Add cumin and fennel seeds, then stir quickly.
Add chopped onions to the pan.
Season with black salt, black pepper, turmeric powder, chili powder, and regular salt.
Cook the onions on low flame until tender, keeping some bite to them.
Spread out the stuffing to cool down quickly.
Knead the rested dough again and cut it into small balls of equal size.
Flatten each ball and add the onion stuffing in the center.
Seal the dough over the stuffing and flatten it slightly.
Heat oil in a pan on low flame for frying.
Fry the kachoris until they float, then increase the flame to brown them properly.
Serve the kachoris with tamarind chutney and green chutney.
