Grilled Salmon with Avocado Salsa

2 salmon fillets
1 pound tomatoes
3 ripe avocados
1/2 lime
1 jalapeno
1 cup corn
2 tablespoons olive oil
salt
pepper
garlic powder
Sherry vinegar

Old Bay seasoning

Remove the skin from the salmon fillets.

Pat the salmon dry and let it air dry in the fridge for about an hour.

Cut the tomatoes, remove the seeds, and dice them into large pieces.

Dice 3 ripe avocados and add them to the bowl with the tomatoes.

Add the juice of half a lime to the avocado mixture.

Remove the seeds from the jalapeno, dice it small, and add it to the salsa.

Add 1 cup of cooked corn to the salsa.

Season the salsa with 2 tablespoons of olive oil, salt, pepper, garlic powder, and Sherry vinegar.

Chop and add fresh basil to the salsa, along with 1/2 diced red onion, and mix well.

Preheat the grill and season the salmon with Old Bay seasoning and a touch of salt.

Grill the salmon for about 4-5 minutes on one side, then flip and grill for a couple more minutes.

Grill asparagus seasoned with olive oil, salt, and pepper alongside the salmon.

Remove the salmon from the grill, let it rest, and top it with the avocado salsa before serving.
