Flemish Beef and Beer Stew

Cultural Context

Flemish Beef and Beer Stew, known as Carbonnade Flamande, hails from the Flanders region of Belgium. This hearty dish reflects the region's love for rich flavors, combining tender beef with the deep notes of Belgian beer, typically served with crusty bread or fries. Traditionally enjoyed during colder months, it has gained popularity beyond Belgium, inspiring variations across Europe and North America.

1

Heat 2 tablespoons of olive oil in a stew pot.

2

Add 1/2 teaspoon of salt and 1/2 teaspoon of pepper to the pot.

3

Add 1 pound of beef cut into bite-sized pieces to the pot and brown for about 10 minutes.

4

Once browned, add 3 coarsely chopped onions to the pot and mix.

5

Pour in 350 milliliters of lager beer and add 3 bay leaves, pushing them down into the mixture.

6

Bring the mixture to a simmer.

7

Prepare 4 slices of rye bread by spreading 3 tablespoons of mustard on each slice.

8

Lay the mustard-covered bread on top of the stew, mustard side up, fitting them like a jigsaw puzzle.

9

Cover the pot and let the stew simmer for 2 hours without stirring.

10

After 2 hours, break up the softened bread into the stew with a spatula and mix it in to thicken the stew.

11

Remove the bay leaves before serving.
