Cut 4 medium-sized russet potatoes as thinly as possible using a knife.
Place the cut potatoes in a bowl and set aside.
In a saucepan over medium-low heat, melt some butter.
Once the butter is melted, add flour to make a roux and stir for about 1-2 minutes until the raw flour flavor is gone.
Add heavy cream to the roux and stir, bringing it to a boil.
Season the sauce with salt and pepper.
Once boiling, add cheddar cheese and stir until melted, adjusting the amount of cheese to your preference.
Turn off the heat and set the cheese sauce aside.
Grease a pan and add one layer of the cut potatoes on the bottom.
Pour half of the cheese sauce over the first layer of potatoes and use a spatula to coat them well.
Sprinkle cheddar cheese over the coated potatoes.
Add another layer of potatoes on top of the cheese.
Pour the remaining cheese sauce over the second layer of potatoes and spread it around with a spatula.
Add another layer of cheddar cheese on top of the second layer of potatoes.
Place the assembled dish in the oven at 375°F for about one hour.
Once out of the oven, the dish should be bubbly; top with grated parmigiano reggiano and garnish with parsley before serving.
