Preheat oven to 350°F (175°C).
Slice 5 potatoes and place them in water to prevent browning.
Butter a baking dish.
In a saucepan, melt 1/4 cup butter over medium heat.
Add chopped onion and sauté until translucent, about 2-3 minutes.
Add 1/4 cup flour to the onions and stir continuously to make a roux, cooking for a few minutes until pasty.
Slowly whisk in 2 cups of 2% milk, adding a little at a time to avoid lumps, and continue stirring until thickened, about 5 minutes.
Season the sauce with dried thyme, garlic powder, cayenne pepper, kosher salt, and black pepper.
Layer the first layer of sliced potatoes in the buttered baking dish, sprinkling with salt, pepper, and bacon bits.
Pour some of the roux over the first layer of potatoes.
Continue layering potatoes, seasoning with salt, pepper, bacon bits, and pouring roux over each layer until all ingredients are used.
Cover the baking dish with foil and bake for 45 minutes.
Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
