1 ONION
4 GARLIC cloves

Boil the Cashews for 20 - 30 minutes. Drain, add to the blender along with Vegetable broth, Milk, Nutritional Yeast and Salt. Blend for 1-2 minutes.

Cook chopped Onions for about 10 minutes with a little bit of plant-based butter, salt and pepper. Add crushed garlic and cook for another minute.

Butter the pan with plant-based butter and layer with thinly sliced potatoes.

Pour a little bit of cream over the potatoes just enough to cover them.

Sprinkle a little bit of Onion and Garlic mixture. Repeat the process 3-4 times.

Bake on the baking sheet lined with foil at 400°F for 1 hour. Check the potatoes if fork tender. If not, bake for an additional 20 minutes.
