Peel 8 medium sized yukon gold potatoes and rinse them in water to remove sand.
Thinly slice the potatoes into 1/8 inch thick slices using a sharp knife.
Preheat the oven to 350°F (175°C).
Place a medium sized saucepan over medium heat and add 3 tablespoons of unsalted butter, allowing it to melt.
Add 1 cup of chopped onions to the saucepan and sauté for 3 minutes until fragrant.
Add 2 minced garlic cloves and cook for an additional 30 seconds until fragrant.
Stir in 3 tablespoons of flour and cook for 1-2 minutes to ensure there are no lumps.
Reduce heat to medium low and gradually mix in 1.5 cups of whole milk, whisking to dissolve any lumps.
Add 1 cup of beef or chicken broth and continue mixing until the sauce thickens.
Season the sauce with 1/4 teaspoon of chili pepper, 1/4 teaspoon of freshly ground black pepper, 1/2 teaspoon of salt, and 1 teaspoon of freshly chopped herbs (rosemary or thyme).
Turn off the heat and stir in 1 cup of sharp cheddar cheese until the sauce is smooth and creamy.
Lightly grease a casserole dish with butter or cooking spray.
Arrange the sliced potatoes in the casserole dish, optionally seasoning with a little salt.
Pour half of the cheese sauce over the potatoes, then repeat with another layer of potatoes and cheese sauce, building up to 3 or 4 layers.
Sprinkle the remaining 1/2 cup of sharp cheddar cheese on top.
Cover the dish with foil to help steam and cook the potatoes faster.
Bake in the preheated oven for 50 minutes until tender and bubbly on top.
Remove the foil and broil for another 5 minutes to achieve a golden top.
