Ingredients

  • 8 oz longevity noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup bok choy, chopped
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, chopped
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp black pepper

Instructions

  1. 1Cook the longevity noodles according to package instructions. Drain and set aside.
  2. 2In a large skillet or wok, heat the vegetable oil over medium heat.
  3. 3Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. 4Add the sliced shiitake mushrooms and cook for 2-3 minutes until softened.
  5. 5Stir in the chopped bok choy and julienned carrots, cooking for another 2-3 minutes until the vegetables are tender.
  6. 6Add the cooked longevity noodles to the skillet, tossing to combine with the vegetables.
  7. 7Pour in the soy sauce, oyster sauce, and sesame oil, stirring well to coat the noodles evenly.
  8. 8Season with black pepper and mix thoroughly.
  9. 9Cook for an additional 2-3 minutes, allowing the noodles to absorb the flavors.
  10. 10Garnish with chopped green onions before serving.
