Longevity Noodles

8 oz longevity noodles
1 lb pork, sliced
3 tbsp light soy sauce
1 tsp salt
8 oz medium-sized prawns, peeled and deveined
4 oz fish cakes, sliced
1/2 cup sliced shiitake mushrooms
1/2 cup carrots, julienned
1/2 cup sweet peas
1/4 cup Chinese chives, chopped
1/2 cup bok choy, chopped
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 tsp sugar
2 tbsp wine
1/2 tsp black pepper
1 tsp sesame oil
1 cup chicken stock
2 tbsp vegetable oil
2 cloves garlic, minced

Bring a pot of water to a boil.

Blanch the 长寿面 noodles for about 4 minutes.

Remove a strand of the noodles to test for al dente; if not ready, cook for another minute.

Transfer the noodles to a pot of cold water to stop cooking.

Remove the noodles from cold water and pass them through a strainer; set aside.

Slice the pork and marinate with light soy sauce and salt; set aside.

Slice the fish cakes and pre-soaked Chinese dry shiitake mushrooms.

Cut the carrots into small pieces.

Remove fibrous strings from sweet peas.

Cut Chinese chives into sections.

Cut bok choy in half.

Prepare a sauce with oyster sauce, light soy sauce, dark soy sauce, sugar, wine, pepper, and sesame oil; mix all ingredients together.

Heat oil in a wok and fry the prawns until just cooked; remove prawns from the wok.

Add pork to the wok, then add garlic and fish cakes.

Add bok choy, carrots, and mushrooms to the wok; add a splash of water or chicken broth if too dry.

Add the prepared seasonings and rinse with more chicken broth.

Return the prawns to the wok, then add sweet peas and half of the chives.

Taste and adjust seasoning with more salt if necessary.

Add the blanched noodles back to the wok and mix carefully with chopsticks to avoid breaking the noodles.
