Longevity Noodles

12 ounces longevity noodles
2 cups napa cabbage, shredded
3 scallions, chopped
3-4 rehydrated shiitake mushrooms, cut into strips
1/2 tablespoon garlic paste
1/2 tablespoon ginger paste
a little rice wine
1 tablespoon sesame oil
2.5 tablespoons double fermented soy sauce
3 tablespoons water
1 teaspoon cornstarch
1 tablespoon garlic powder
1/4 teaspoon ground white pepper
salt to taste

Start by boiling water in a pot.

Add 12 ounces of longevity noodles to the boiling water and cook for about 2-3 minutes until just tender.

Drain the noodles in the sink and run cold water over them to stop the cooking process.

Prepare 3-4 rehydrated shiitake mushrooms by cutting them into strips.

Marinate the mushrooms with 1/2 tablespoon garlic paste, 1/2 tablespoon ginger paste, a little rice wine, and 1 tablespoon sesame oil for about 15 minutes.

Shred 2 cups of napa cabbage and chop 3 scallions.

In a bowl, mix 3 tablespoons of water with 1 teaspoon of cornstarch and 2.5 tablespoons of double fermented soy sauce to create a sauce.

In a large pan, add 2-3 tablespoons of water and 1 tablespoon of garlic powder to cook the cabbage.

Cook the cabbage for 2-3 minutes until it starts wilting down.

Add 1/4 teaspoon of ground white pepper and the marinated mushrooms to the pan with the cabbage.

After the mushrooms are cooked, add the sauce to the pan and wait about a minute until it starts thickening up.

Add the cooked noodles to the pan, and if they clump together, add a little bit of water to loosen them up.

Finally, add the chopped scallions to the pan and mix everything together.

Shut off the heat and adjust flavors with salt and a little more sesame oil if desired.

Plate the noodles in a large bowl for sharing.
