Longevity Noodles

2 cups wheat flour
3/4 cup cold water
1 tsp salt
1 lb chicken
1 cup bell peppers, sliced
1 cup potatoes, diced
1 cup celery, chopped
1/2 cup woodier mushrooms, sliced
2 dried red chili peppers
3 tbsp soy sauce
1 tsp spices

Make the dough using wheat flour, cold water, and a little bit of salt.

Prepare the dough into long coils, rolling it out into sticks and coiling them up.

Tug on the end of the coil and slowly stretch the noodle to avoid breaking it.

Wind the noodle up in both hands to ensure even thickness before pulling.

Pull the noodle by hitting it on the work surface to stretch it consistently and create a sound.

Cook the pulled noodles in boiling water for about 3 to 5 minutes.

While the noodles are cooking, sauté chicken with bell peppers, potatoes, celery, woodier mushrooms, and dried red chili peppers in a wok on high heat with soy sauce and spices.

Once the noodles are cooked, fish them out and place the sautéed chicken and vegetables on top of the noodles and serve immediately.
