8 oz ein noodles
5 oz garlic chives
6 shiitake mushrooms
1 tablespoon avocado oil
1/2 cup water
1 teaspoon sugar
1 teaspoon regular soy sauce
1 teaspoon dark soy sauce
1 tablespoon oyster sauce
1/4 teaspoon ground white pepper
1 teaspoon sesame oil

Chop 5 oz of garlic chives into 2-inch lengths.

Remove stems from 6 shiitake mushrooms and thinly slice them.

Boil water to rehydrate the ein noodles for about 2 minutes until separated.

Drain the noodles and wipe the pot clean with a paper towel.

Heat 1 tablespoon of avocado oil in a wok over medium heat.

Add the chopped chives and sliced mushrooms to the wok and stir-fry for 1-2 minutes until cooked through.

Add 1/2 cup of water, 1 teaspoon of sugar, 1 teaspoon of regular soy sauce, 1 teaspoon of dark soy sauce, 1 tablespoon of oyster sauce, and 1/4 teaspoon of ground white pepper to the wok.

Bring the sauce to a boil and mix well.

Add the rehydrated noodles to the wok and gently mix to coat them in the sauce.

Turn off the heat and add the remaining chives and 1 teaspoon of sesame oil, mixing gently to combine.
