Longevity Noodles

1 package of noodles
dried shiitake mushrooms (soaked for 30 minutes)
1/2 carrot
1/2 bunch of chives
2 cloves of garlic

2 teaspoons oyster sauce
1 teaspoon dark soy sauce
1 teaspoon regular soy sauce
1/2 teaspoon pink salt

Soak dried shiitake mushrooms in water for about 30 minutes until they expand, then squeeze out excess water and rinse them.

Chop the soaked shiitake mushrooms into small pieces.

Slice half a carrot into thin pieces.

Cut the chives into small sections.

Mince the garlic cloves.

In a wide pan, bring water to a boil and add the entire package of noodles to blanch them until they are separated.

Once the water is boiling, add the noodles and cook until they are loose and separated.

In the same pan, add vegetable oil and minced garlic, sautéing until fragrant.

Add the chopped shiitake mushrooms and sauté for a moment.

Pour in about 1/2 cup of water and add the sliced carrots, cooking for about 1 minute.

Add 2 teaspoons of oyster sauce, 1 teaspoon of dark soy sauce, and 1 teaspoon of regular soy sauce to the pan.

Add approximately 1/2 teaspoon of pink salt and stir everything together.

Add the cooked noodles to the pan, allowing them to absorb the flavors and any remaining water.

Finally, add the chopped chives and drizzle with sesame oil, mixing everything well.

Sprinkle a little black pepper on top before serving.
