8 ounces dry noodles
1 tablespoon oil
2 sliced shallots
2 minced garlic cloves
1 cup sliced mushrooms

1 tablespoon low sodium soy sauce
0.5 tablespoon dark soy sauce
1 tablespoon Mirin
0.5 tablespoon Shaoxing wine
1 tablespoon oyster sauce
2 teaspoons sesame oil
1 teaspoon sugar
ground white pepper
sliced green onions
chili oil (optional)

Cook 8 ounces of dry noodles according to package instructions, then drain and rinse with water.

Heat a wok on medium-high heat and add 1 tablespoon of oil.

Add 2 sliced shallots and 2 minced garlic cloves, stir fry for 1 minute.

Add 1 cup of sliced mushrooms and lightly season with salt, stir fry for 2 minutes.

If it looks too dry, add a splash of oil.

Add the cooked noodles to the wok.

Add 1 tablespoon of low sodium soy sauce, 0.5 tablespoon of dark soy sauce, 1 tablespoon of Mirin, 0.5 tablespoon of Shaoxing wine, 1 tablespoon of oyster sauce, 2 teaspoons of sesame oil, and 1 teaspoon of sugar, then mix it all together.

Season with ground white pepper and add a handful of sliced green onions, tossing everything together.

Drizzle with chili oil if desired.
