Soak dried fruits (apricot, golden raisin, red raisin, dried cranberries, dates) in orange juice for a minimum of 1 hour, preferably overnight in the refrigerator.
Grease the cake pan with butter or oil, ensuring all sides and edges are covered.
Preheat the oven to 350°F (180°C).
In a bowl, combine all-purpose flour, cocoa powder (optional), baking powder, baking soda, cinnamon powder, and nutmeg powder, and whisk together.
Add brown sugar to the dry ingredients and whisk again to combine.
In another bowl, mix the soaked fruits, butter or oil, mixed dry nuts, milk, and vanilla extract until well combined.
Combine the wet and dry ingredients, mixing gently to avoid overmixing.
Pour the batter into the prepared cake pan and tap it 3-4 times to settle.
Spread chopped and sliced fruits and nuts on top of the batter.
Bake for 35-40 minutes at 350°F (180°C) or until a toothpick comes out clean.
Cool the cake in the pan for 15 minutes before turning it out and allowing it to cool completely before cutting.
