Ghanaian Pork Sauce

Traditionally served during gatherings and celebrations, it highlights the use of fresh ingredients and bold spices. Today, it is enjoyed both locally and by the Ghanaian diaspora, often adapted with various meats and spices to suit different palates.

Chicken is lower in fat and beef is often more affordable.

Jalapeños provide heat with fewer calories, while banana peppers are milder and cost-effective.
Blend tomatoes, carrots, bell peppers, and pepper; transfer to saucepan.
Boil the mixture until the water evaporates.
Blend the pepper mix and season the pork with it.
Wash the pork well before using.
Add a little water to the pork to create stock.
In a saucepan, add oil and one large chopped onion; fry on low heat.
Add the pepper mix to the onions and mix well; cover and fry for 5 minutes.
Add a tablespoon of tomato paste to the mixture.
Add the cooked tomato mix to the saucepan and mix well.
Cook for 15 minutes after adding the tomato mix.
Add pork stock to elevate the flavor; fry on low heat.
Add seasoning mix (mixed seasoning cube and Remy chicken) to the sauce.
Add the cooked pork to the sauce; mix well and reduce heat.
Cover and let it fry on low heat; garnish with onions.
