This dish is infused with a blend of spices and herbs, reflecting the island's diverse culinary influences. Families gather to enjoy this flavorful centerpiece, often accompanied by rice and peas or macaroni pie, making it a cherished part of holiday feasts.

Jalapeños provide heat with less intensity.
Start by making the seasoning paste using a food processor or blender.
Add 10 cloves of garlic to the processor, chopped up a bit.
Add 1/4 of a scotch bonnet pepper to the processor.
Add a healthy amount of fresh thyme to the processor.
Pour in some olive oil to help the seasoning stick.
Add black pepper to the mixture.
Blend all ingredients until you have a smooth paste, scraping down the sides as needed.
Using a sharp knife, make small cuts and twists in the pork shoulder to create holes for the seasoning to penetrate.
Sprinkle salt over the pork shoulder, working it into the meat and into the holes you created.
Divide the seasoning paste in half and apply half to one side of the pork, working it into the holes.
Flip the pork and apply the remaining seasoning paste, ensuring it gets into the holes and covers the meat thoroughly.
Let the seasoned pork sit for a minimum of 1 hour, preferably longer, up to overnight in the refrigerator.
If marinating overnight, take the pork out of the fridge at least 1 hour before cooking to bring it to room temperature.
