1

Cut the pork ribs in half.

2

Season the ribs with salt, black pepper, cumin, onion powder, and paprika on both sides.

3

Place the seasoned ribs in a baking tray.

4

Add a little water to the bottom of the tray and sprinkle brown sugar over the ribs.

5

Cover the tray with aluminum foil and bake in the oven at 170 degrees Celsius for a couple of hours.

6

After baking, brush the ribs with barbecue sauce and return them to the oven for 10 minutes without the foil.

7

In a pan, melt butter and add achiote and garlic paste; mix well.

8

Add chopped red onion and green bell pepper to the pan and mix well to complete the sauté.

9

Season the mixture with salt and black pepper.

10

Add previously cooked lentils to the pan and mix.

11

Pour in the water used to cook the lentils, noting that more liquid will make the dish juicier.

12

Incorporate the cooked rice into the lentil mixture and mix thoroughly.

13

Add hot heavy cream and mix well before the rice absorbs it completely.

14

Add a generous amount of cheese and mix until melted, cooking on low heat to prevent drying out.

15

Check the ribs after baking and prepare to serve the dish.

16

Serve the lentils topped with the ribs and garnish with fresh cilantro.
