Fried Beef for Jollof Rice

Fried beef is a popular accompaniment to Jollof rice, a beloved West African dish. Originating from Nigeria, Jollof rice is often served at celebrations and gatherings, with the fried beef adding a savory contrast to the rich, spiced rice. Today, variations of Jollof rice and its accompaniments can be found across West Africa, each with its unique twist.

Chicken is leaner and often less expensive than beef.

Olive oil offers healthier fats, while canola is often cheaper.
Wash the beef and chicken thoroughly until clean.
Pour the washed meat into a pot.
Add the seasoning mixture: chopped garlic, chopped onion, salt, mug cube, thyme, curry, garlic powder, black pepper, and oregano.
Mix everything together in the pot.
Cover and boil for 10 minutes without adding water.
After 10 minutes, open the pot; the meat should be boiling in its own juices.
Add some water to the pot and cover; boil for an additional 5 to 7 minutes.
Open the pot and stir everything together.
Cover and boil until the meat is soft and cooked to your taste.
Once cooked, drain the water from the meat using a sieve.
Pour vegetable oil into a pot and heat it up.
Test if the oil is hot enough by adding a piece of sliced onion; if it sizzles, it's ready.
Add the boiled meat into the hot oil.
Add three whole garlic cloves and one sliced onion to the oil with the meat.
Fry the meat until the first side is brown, then turn it over to fry the other side until golden brown.
Once both sides are golden brown, remove the meat from the oil.
Remove the onions from the oil as well.
