200 mL whole milk
2 egg yolks
2 teaspoons corn flour
1 tablespoon castor sugar
1 teaspoon vanilla extract
1

In a bowl, add 2 egg yolks, 1 tablespoon of castor sugar, and 2 teaspoons of corn flour. Mix until well combined.

2

In a saucepan over low heat, add 200 mL of whole milk and 1 teaspoon of vanilla extract. Mix until well combined and warmed through.

3

Ensure the milk is not too hot to avoid scrambling the eggs; it should be at a nice body temperature.

4

Add the egg yolk mixture to the milk gradually, stirring really well as you add it.

5

Continue stirring until the mixture thickens up fairly quickly.

6

If the eggs scramble slightly and you notice little bits, strain the mixture to remove those bits.
