Separate 2 eggs, using the yolks for the recipe and saving the whites for another use.
Cut 200 g of cold butter into cubes and add to a mixing bowl.
Add 150 g of sugar to the bowl and mix everything very well.
Add 1 pack of vanilla sugar, 150 g of almond flour, and 300 g of all-purpose flour to the bowl and mix again until the dough is ready.
Transfer the dough onto a workspace and knead everything together.
Form the dough into a little roll, cut it in half, and set half aside.
Roll out the remaining half into a longer and thinner shape, then cut it in half again and set half aside.
Roll the smaller piece into a finger-thick slice, shape it into a half moon, and transfer it onto a baking sheet.
Repeat the process of cutting off finger-thick slices, rolling them, and shaping them into half moons until all dough is used.
If not baking all cookies at once, wrap part of the dough in foil and refrigerate for later use.
Place the shaped cookies in the fridge for at least 30 minutes to prevent them from melting during baking.
Preheat the oven to 350°F (175°C).
Bake the cookies for 15 to 20 minutes, depending on how brown you like them.
Let the cookies cool and then sprinkle icing sugar on top.
