Place the butter and vanilla bean seeds into the bowl and whisk together.
Add powdered sugar to the mixture and beat until combined.
Add egg yolks one by one into the mixture and mix until combined.
Sift the cake flour and incorporate it into the mixture using a rubber spatula until just combined.
Press plastic wrap against the dough and refrigerate for 1 hour.
After 1 hour, divide the dough using a dough scraper into pieces weighing about 10 grams each.
Shape each piece of dough into balls and place them on a baking sheet.
Taper the two ends of each cookie and form them into a crescent shape.
Preheat the oven to 200 degrees Celsius for 30 minutes.
Bake at 170 degrees Celsius for approximately 20-25 minutes.
Remove from the oven and let the cookies cool on the baking trays for 10 minutes before transferring to a wire rack.
Roll the cookies in powdered sugar.
