Preheat grill to medium-high heat.
Rub lamb ribs with olive oil, garlic, rosemary, thyme, salt, and black pepper.
Marinate for at least 30 minutes, or overnight for deeper flavor.
Place marinated lamb ribs on the grill, bone side down.
Grill for 15-20 minutes, turning occasionally until browned and cooked through.
In a saucepan, combine lemon juice, onion, paprika, cumin, and bay leaves.
Simmer sauce over low heat for 10 minutes to blend flavors.
Brush honey over ribs during the last 5 minutes of grilling.
Remove ribs from grill and let rest for 5 minutes before slicing.
Serve with sauce drizzled over the top and garnish with parsley.
