Today, watermelon jam has gained popularity beyond Azerbaijan, with variations appearing in many cultures, celebrating the fruit's refreshing taste in a new form.

Cut watermelon into chunks and remove seeds.
Puree watermelon in a blender until smooth.
Strain the puree through a fine sieve to remove pulp, if desired.
Combine watermelon puree, sugar, and lemon juice in a large pot.
Add pectin and stir well to combine.
Bring the mixture to a boil over medium heat, stirring frequently.
Boil for 10-15 minutes until the mixture thickens.
Add vanilla extract, cinnamon, and salt, stirring to incorporate.
Remove from heat and let cool slightly.
Pour into sterilized jars and seal tightly.
Allow to cool completely at room temperature before refrigerating.
