1 cup chicken or vegetable broth
1 cup dried apricots or prunes
1/2 cup raisins or saltenas
1/4 cup honey
1/2 cup almonds, blanched and toasted
fresh cilantro, chopped for garnish
1 and 1/2 cups couscous
1 and 1/2 cups boiling water
1 tablespoon butter or olive oil
fresh parsley, chopped for garnish

Heat the olive oil in a large tagine pot or heavy-bottom pot over medium heat.

Add the chopped onions and garlic, and sauté until soft and fragrant.

Add the meat pieces to the pot and brown them on all sides.

Season the meat with ground ginger, ground cinnamon, ground cumin, ground turmeric, paprika, black pepper, and salt, stirring well to coat the meat with the spices.

Pour in the chicken or vegetable broth, ensuring the meat is mostly covered, and bring to a boil.

Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours or until the meat is tender.

About 30 minutes before the meat is done, add the dried apricots or prunes and raisins or saltenas to the pot.

Stir in the honey and continue to simmer until the fruits are plump and the flavors meld together.

In a heatproof bowl, combine the couscous with boiling water, butter or olive oil, and a pinch of salt.
