Soft Pretzels

Cultural Context

Soft pretzels are a popular snack in the United States, especially at fairs, sporting events, and street vendors. They have roots in German baking traditions, where pretzels were originally made as a symbol of good luck. 1

Add 4 tablespoons of butter cut into pieces to 3/4 cup of water in a liquid measuring cup.

2

Microwave the water and butter mixture for 40 seconds.

3

Stir the mixture with a spoon until the butter is fully melted.

4

Add 2 teaspoons of yeast to the butter water mixture and mix until dissolved.

5

Add 1 tablespoon of granulated sugar, 2 tablespoons of brown sugar, and 1/2 teaspoon of salt to the yeast mixture and mix until well incorporated.

6

Let the mixture sit for a few minutes.

7

Sift 2 1/2 cups of all-purpose flour into a mixing bowl to remove clumps.

8

Pour the yeast butter mixture into the flour and mix with a wooden spoon until the dough starts to come together.

9

If the dough is sticky, add a spoonful of flour and mix until it forms a cohesive dough.

10

Knead the dough in the bowl by folding, pushing down, and turning it for about 15 times until smooth.

11

Prepare a large Ziploc bag by spraying the inside with cooking spray.

12

Place the kneaded dough into the greased Ziploc bag, press out the air, and seal it.

13

Label the bag and let it rise for about 2 hours or until doubled in size.

14

Preheat the oven to 425 degrees Fahrenheit.

15

Prepare a baking sheet with parchment paper.

16

Cut the risen dough into sections using a pizza cutter, aiming for 5-6 pieces.

17

Roll each piece of dough into a long rope, then shape it into a U.

18

Crisscross the ends of the U and twist them slightly, then bring the ends back up to form a pretzel shape.

19

Prepare a warm baking soda bath by microwaving 1 cup of water for 30 seconds and whisking in 2 tablespoons of baking soda until dissolved.

20

Dip each pretzel into the baking soda water bath and transfer to the parchment-lined baking sheet.

21

Bake the pretzels for 12 to 15 minutes or until lightly browned.

22

Prepare toppings by mixing 1 tablespoon of coarse salt and 1 teaspoon of cinnamon with 1 tablespoon of granulated sugar in separate bowls.

23

Once baked, brush each pretzel generously with melted butter to make them shiny.

24

Sprinkle coarse salt or cinnamon sugar on top of the pretzels as desired.
