Kunafa, a beloved dessert in Jordan and the Middle East, has roots that trace back centuries. Traditionally enjoyed during Ramadan and special occasions, its layers of crispy dough and creamy filling symbolize celebration and hospitality. Today, kunafa has gained global popularity, with various adaptations featuring different fillings and toppings, making it a favorite in many cultures.

1 cup sugar
1 cup water
1 teaspoon rose water
1/2 teaspoon lemon juice
1.5 tablespoons semolina
1.5 cups mozzarella cheese
1.5 tablespoons corn flour
1 tablespoon ghee
1/4 teaspoon saffron

Start by preparing the sugar syrup. In a pot, combine 1 cup sugar and 1 cup water. Heat until the sugar dissolves.

Add 1 teaspoon rose water and 1/2 teaspoon lemon juice to the sugar syrup and mix well. Turn off the heat and set aside to cool.

For the kunafa filling, in a bowl, combine 1.5 tablespoons semolina, 1.5 cups mozzarella cheese, and 1.5 tablespoons corn flour. Mix well.

Add 1 tablespoon ghee to the mixture and mix until well combined. Let it cool down.

Once cooled, add a pinch of cardamom powder for flavor.

Prepare the kunafa dough by shredding it into thin strands. If you can't find kunafa dough, you can use a similar alternative.

Take a baking dish and layer the kunafa strands evenly at the bottom.

Place the prepared filling in the center of the kunafa strands, leaving the edges clear.

Cover the filling with more kunafa strands, ensuring it's well sealed.

Preheat the oven to 168 degrees Celsius and bake for 25 minutes or until golden brown.

Once baked, remove from the oven and let it cool slightly before serving.

Drizzle the prepared sugar syrup over the kunafa and garnish with chopped pistachios.
