1

Welcome viewers and introduce the dish as a traditional chicken and rice dish from Saudi Arabia.

2

Explain that the dish is cooked in a milk base rather than just water, resulting in a porridge-like consistency.

3

Prepare the chicken by covering it in water, adding 1/4 cup of vinegar, lemon juice, and a lot of salt, and letting it sit for about 30 minutes.

4

Wash and soak 2 cups of Calrose rice in room temperature water for about 30 minutes.

5

Gather the spices: 1-2 cinnamon sticks, 1 bay leaf, 8 cardamom pods, 4-5 cloves, a small handful of peppercorns, and a Maggie Cube, along with 1/2 onion and a green pepper.

6

Add the chicken to a pot with enough hot water to cover it, along with the whole spices, and cover the pot to cook on medium-high heat for about 45 minutes.

7

Prepare the spicy blended tomato salad (duckus) by chopping 1 medium onion, 2 medium tomatoes, and a handful of fresh cilantro, and optionally adding a hot pepper.

8

Juice a lemon and add a pinch of cumin, coriander, salt, and pepper to the salad mixture, along with 1/4 cup of water and 2 tablespoons of olive oil, then blend until smooth.

9

Put the blended salad in the fridge until needed.

10

For the optional onion topping (hashu), coat the bottom of a pan with olive oil and add 1 tablespoon of ghee, then heat it up.

11

Add 2 medium chopped onions to the pan and cook until they are soft and caramelized.
