Heat 2 tablespoons of olive oil in a pan over medium to high heat.
Add the sliced onions to the pan and slow cook for about 10 minutes until softened.
Reduce heat to medium and stir the onions every few minutes to avoid overcooking.
Add minced garlic to the onions and cook until combined.
Add 3/4 cup of water to the pan.
Season with 1 teaspoon of pink himalayan salt, 1 teaspoon of black pepper, and 1 tablespoon of chili garlic sauce, stirring to combine.
Add the diced tomatoes to the pan and let the sauce simmer for about 10 minutes until the tomatoes break down.
Optionally, add a can of tuna in the last few minutes of cooking for protein.
Chop fresh parsley and sprinkle on top before serving.
