1 tsp cumin seeds
1 stalk lemongrass, minced
1 inch galangal, minced
1/2 tsp turmeric
1/2 tsp white pepper
1/2 tsp cinnamon
1/4 tsp clove
2 tbsp brown sugar
1/2 tsp salt
1 cup coconut milk
2 tbsp vinegar
1/4 cup water
1 lb pork loin, cut into bite-sized pieces
2 tbsp red curry paste
1/2 cup ground peanuts
2 tbsp toasted white sesame seeds
2 tbsp palm sugar
1 tbsp fish sauce
2 tbsp lime juice
1/2 cucumber, sliced

Toast coriander seeds and cumin seeds.

Finely chop lemongrass and galangal.

Add turmeric, white pepper, cinnamon, and clove for warm spice flavor.

Mix in brown sugar and salt.

Add coconut milk to keep things moist.

Add a little vinegar to brighten up the flavor of the meat.
