Heat 1 tbsp vegetable oil and 30 g butter in a pot.

Chop and add 1 onion and 1 clove of garlic; sauté until translucent.

Add 1 carrot, 2 medium potatoes, and 500 g pumpkin to the pot.

Pour in 800 ml hot water and bring to a boil.

Reduce heat and let it simmer for 20 minutes until cooked.

Add 1 tsp salt and your favourite seasoning (various peppers) 5 minutes before the soup is done cooking.

Use an immersion blender to purée the mixture until smooth for a creamy consistency.

Stir in 50 ml whipping cream.

Optionally, serve with croutons on top.
